2 large fresh zucchini (4 halves)
1 lb ground turkey or extra lean ground beef
½ medium onion, diced
1 diced bell pepper
1 tbsp Mrs Dash Chipotle seasoning
1 large can stewed tomatoes (low salt)
2 tbsp tomato paste
½ cup quinoa, cooked
Wash zucchini and slice off ends. Then slice the zucchini lengthwise down the middle and scoop out the soft centers. Place in baking dish and pre-bake in 350 degree oven for about 15 minutes.
Meanwhile, cook quinoa according to package directions. While that is simmering, cook the meat, onion, and pepper in fry pan until browned. Add seasoning and salt and pepper to taste. Remove meat from pan and set aside. Replace pan to stove on low heat, and add cooked quinoa, tomatoes and tomato paste and bring to a bubble. Add meat mixture back into pan and combine into tomato sauce. Cover and simmer for about 15 minutes.
Remove zucchini from oven when fork-tender (about 15 minutes), and then fill the hollowed out centers with the tomato / meat mixture. Cover pan with foil and place back in 350 degree oven for about 20 minutes.
Remove and let cool slightly before serving.
